INGREDIENTS

30 ml Kahlúa coffee liqueur

30 ml vodka (try Absolut!)

30 ml Irish cream liqueur

6 teaspoons white caster sugar (superfine sugar)

300 ml heavy or double cream

Popsicle molds

1 parts Kahlúa coffee liqueur

1 parts vodka (try Absolut!)

1 parts Irish cream liqueur

6 teaspoons white caster sugar (superfine sugar)

10 parts heavy or double cream

HOW TO MAKE

 

Serves six people

  1. Pour all the ingredients into a jug with a spout.

  2. Stir until everything is properly mixed through.

  3. Carefully pour the creamy mixture into your popsicle molds.

  4. Freeze for one hour before carefully pushing a popsicle stick into each mold.

  5. Leave them to freeze overnight (or until solid).

  6. Once frozen, gently warm the outsides of the molds by running them under lukewarm water, before slipping the popsicles out.

  7. Serve, enjoy and watch out for brain freeze…!

  8. Tip: If you can’t find caster sugar, granulated sugar makes a great substitute.

PRO TIPS

This recipe can be adapted and refined to your taste by adjusting key ingredients like sugar, or the type of cream. Just remember – adding larger measures of alcohol will lengthen the time it takes for the popsicles to freeze (and might even stop them from freezing, if you add too much!).
