Pumpkin Spice Drinks: What They Are and 7 Kahlúa Cocktails to Try

Written by: Kahlúa Drinks Team

As soon as the weather starts to cool down and the leaves begin to change, pumpkin spice seems to start showing up in drink menus everywhere.

Most people think of a Pumpkin Spice Latte first, and that’s fair. It’s become one of the signature drinks of fall. But after years of creating, testing, and tasting drinks, we’ve found that pumpkin spice has a lot more to offer than one coffee order.

This guide covers what pumpkin spice actually is, why it works so well in drinks, and seven ways our Kahlúa Drinks Team uses it during the fall months.

What Exactly is Pumpkin Spice?

Pumpkin spice is a blend of baking spices – specifically cinnamon, nutmeg, ginger, allspice, and cloves – all named for pumpkin pie rather than for pumpkin. The blend actually contains no pumpkin at all, which surprises most people the first time they hear it.

What Does Pumpkin Spice Taste Like?

Part of pumpkin spice’s appeal is that it isn’t built around a single flavor. Each spice brings something different to the glass.

Cinnamon adds sweetness, ginger adds brightness, nutmeg brings richness, and cloves and allspice provide depth. Together, they create a flavor that’s familiar without being overly complicated.

When is Pumpkin Spice Season?

For us, pumpkin spice is closely tied to the arrival of fall.

Pumpkin spice season starts earlier every year, with most coffee chains launching in late August. From September onwards, pumpkin spice shows up at Halloween parties, Thanksgiving gatherings, weekend brunches, and casual get-togethers. By November it has become part of the season itself.

Fun fact: online search interest for pumpkin spice drinks climbs from September and peaks in October at roughly four times its annual average before dropping off after Thanksgiving.

How to Make Pumpkin Spice at Home

You can mix your own in about a minute. Our Drinks Team uses 3 teaspoons ground cinnamon, 2 teaspoons ground ginger, 2 teaspoons ground nutmeg, 1 teaspoon ground allspice, and 1/2 teaspoon ground cloves. That makes roughly 3 tablespoons, enough for a season’s worth of drinks.

Store the pumpkin spice blend in a sealed jar away from heat and it will hold its aroma for about six months. Cinnamon leads the blend on purpose, since it carries the sweetness that the other three build on.

What are Pumpkin Spice Drinks?

When we talk about pumpkin spice drinks, we’re not talking about one specific recipe. We’re talking about a whole category of drinks built around this blend of spices.

Over the years we’ve used it in everything from hot coffee and cold-brew cocktails to pre-dinner classics and dessert-style drinks. Some builds worked better than others, for example, it clashes with anything citrus-forward. Still, pumpkin spice remains one of the quickest ways to give a drink a distinctly fall character.

Why Pumpkin Spice Drinks are so Popular

The flavor itself is only part of the reason pumpkin spice keeps coming back every year while other drink trends fade away.

The aroma of pumpkin spice has a way of bringing back memories of baking, holidays, and cooler weather. Even before the first sip, you usually know exactly what to expect.

We’ve also noticed that pumpkin spice works in a surprisingly wide range of drinks. An Espresso Martini, White Russian, or Old Fashioned can all carry those familiar flavors without feeling out of place.

Why Pumpkin Spice Works So Well in Drinks

We think it’s because pumpkin spice pairs naturally with ingredients already common in drinks.

Coffee is probably its best-known partner. The roasted notes in coffee help balance the sweetness of the spices. Creamy ingredients like milk, cream, ice cream, and whipped cream are another great match since they help soften the spice blend and give drinks a richer texture.

Hot or Cold? We Like Both

People often ask us whether pumpkin spice is better in hot drinks or cold ones. We say, it depends on the day.

On a chilly afternoon, a hot Pumpkin Spice Latte cocktail is hard to beat. The heat brings out the aroma of the spices, which we think is a big part of the experience.

On the other hand, iced drinks and frozen cocktails highlight different parts of the flavor. They often feel creamier and slightly sweeter, which is why we prefer them during early fall evenings or after-dinner treats.

7 Pumpkin Spice Cocktails We Make with Kahlúa

Why Pumpkin Spice and Kahlúa Work So Well Together

When we’re creating fall cocktails, Kahlúa is naturally one of the first ingredients we think about.

Kahlúa is a coffee liqueur, and coffee is pumpkin spice’s most natural companion. The roasted notes cut the sweetness of the cinnamon while Kahlúa‘s caramel undertone picks up the nutmeg.

During recipe testing, we’ve found that neither ingredient overpowers the other. The spice blend adds aroma and character, while Kahlúa adds richness and depth. It’s one of those combinations that feels natural from the first sip.

You don’t even need a recipe. A pinch of pumpkin spice or about an eighth of a teaspoon dusted over any Kahlúa cocktail instantly turns it into a fall drink.

Our Drinks Team’s Best Pumpkin Spice Tips

If we’ve learned one thing after making countless pumpkin spice drinks over the years, it’s that a little goes a long way.

A common mistake is adding too much spice. More isn’t always better. We’ve found that a lighter touch creates a more balanced drink and lets the other ingredients shine.

One simple trick we use is adding a light dusting of pumpkin spice on top just before serving. It doesn’t seem like much, but the aroma makes a noticeable difference.

Pumpkin Spice Drink Questions We Get Asked

What alcohol is good with pumpkin spice?
Coffee liqueur, aged rum, bourbon, and cream liqueurs all take pumpkin spice well, because each already carries vanilla or caramel notes that sit alongside cinnamon and nutmeg. Kahlúa is the most forgiving of the four. Its coffee base handles a heavier hand with the spice than a clear spirit will.

What’s a good fall alcoholic drink?
A Pumpkin Spice Espresso Martini is the one we make most between September and November because it works hot-weather-to-cold and needs no special equipment beyond a shaker.

What should you drink in October?
October is peak pumpkin spice month with searches for it running roughly four times the annual average, making it the right month for the spice-forward builds on this page, with the richer dessert drinks better suited to late November.

Our Favorite Dessert Pairings

When we’re serving pumpkin spice drinks, we often pair them with some of our favorite Kahlúa Treats. Desserts like Kahlúa Pumpkin Pie, Kahlúa Coffee Cheesecake, and Kahlúa Tiramisu work particularly well because they share many of the same flavors found in the drink itself.

The Ultimate Fall Flavor Combination

Coffee. Pumpkin spice. Cream. A hint of sweetness.

It’s a combination that’s become synonymous with the season, and Kahlúa helps bring every element together. Whether you’re shaking up a Pumpkin Spice Espresso Martini, pouring a Pumpkin Spice White Russian, or creating your own fall masterpiece, pumpkin spice and Kahlúa make an unbeatable pair.

Here’s our final Drinks Team’s tip: don’t wait for dessert. Pumpkin Spice Kahlúa Cocktails are just as good enjoyed by a fireside chat, during a cozy movie night, or as the finishing touch to an autumn dinner party.

Because some flavor combinations only come around once a year, and this is one worth savoring. Spice on!
