As soon as the weather starts to cool down and the leaves begin to change, pumpkin spice seems to start showing up in drink menus everywhere.
Most people think of a Pumpkin Spice Latte first, and that’s fair. It’s become one of the signature drinks of fall. But after years of creating, testing, and tasting drinks, we’ve found that pumpkin spice has a lot more to offer than one coffee order.
This guide covers what pumpkin spice actually is, why it works so well in drinks, and seven ways our Kahlúa Drinks Team uses it during the fall months.
Pumpkin spice is a blend of baking spices – specifically cinnamon, nutmeg, ginger, allspice, and cloves – all named for pumpkin pie rather than for pumpkin. The blend actually contains no pumpkin at all, which surprises most people the first time they hear it.
Part of pumpkin spice’s appeal is that it isn’t built around a single flavor. Each spice brings something different to the glass.
Cinnamon adds sweetness, ginger adds brightness, nutmeg brings richness, and cloves and allspice provide depth. Together, they create a flavor that’s familiar without being overly complicated.
For us, pumpkin spice is closely tied to the arrival of fall.
Pumpkin spice season starts earlier every year, with most coffee chains launching in late August. From September onwards, pumpkin spice shows up at Halloween parties, Thanksgiving gatherings, weekend brunches, and casual get-togethers. By November it has become part of the season itself.
Fun fact: online search interest for pumpkin spice drinks climbs from September and peaks in October at roughly four times its annual average before dropping off after Thanksgiving.
You can mix your own in about a minute. Our Drinks Team uses 3 teaspoons ground cinnamon, 2 teaspoons ground ginger, 2 teaspoons ground nutmeg, 1 teaspoon ground allspice, and 1/2 teaspoon ground cloves. That makes roughly 3 tablespoons, enough for a season’s worth of drinks.
Store the pumpkin spice blend in a sealed jar away from heat and it will hold its aroma for about six months. Cinnamon leads the blend on purpose, since it carries the sweetness that the other three build on.
When we talk about pumpkin spice drinks, we’re not talking about one specific recipe. We’re talking about a whole category of drinks built around this blend of spices.
Over the years we’ve used it in everything from hot coffee and cold-brew cocktails to pre-dinner classics and dessert-style drinks. Some builds worked better than others, for example, it clashes with anything citrus-forward. Still, pumpkin spice remains one of the quickest ways to give a drink a distinctly fall character.

Pumpkin Spice Cold Brew
Cold brew brings out a different side of pumpkin spice. Its lower acidity leaves more room for the ginger and clove notes than hot coffee does, which is why we build this one on the Kahlúa Dunkin’ Cold Brew base.
Pumpkin Spice Old Fashioned
The Pumpkin Old Fashioned is the spirit-forward option in this set. Pumpkin spice layers baking-spice aroma over the whiskey, and Kahlúa softens the finish with coffee and caramel instead of the usual sugar cube.
When we’re creating fall cocktails, Kahlúa is naturally one of the first ingredients we think about.
Kahlúa is a coffee liqueur, and coffee is pumpkin spice’s most natural companion. The roasted notes cut the sweetness of the cinnamon while Kahlúa‘s caramel undertone picks up the nutmeg.
During recipe testing, we’ve found that neither ingredient overpowers the other. The spice blend adds aroma and character, while Kahlúa adds richness and depth. It’s one of those combinations that feels natural from the first sip.
